Preparing the Lamb Souvlaki

    Marinate the Lamb

    In a large bowl, combine the cubed lamb, olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well to coat the lamb evenly. Cover and let it marinate in the refrigerator for at least 1 hour or overnight for best flavor.

    Skewering the Lamb

    After marination, preheat your grill or grill pan to medium-high heat. Thread the marinated lamb onto skewers, leaving a little space between each piece.

    Grilling the Lamb

    Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.

Assembling the Pita Sandwich

    Prepare the Pita

    While the lamb is grilling, warm the pita bread on the grill for about 1 minute on each side until soft and pliable.

    Assemble the Sandwich

    Once the lamb is cooked, remove it from the skewers and slice into smaller pieces if desired. Layer the shredded lettuce, diced tomatoes, sliced red onion, and crumbled feta cheese on each pita. Top generously with the grilled lamb pieces and a spoonful of tzatziki sauce.
