Marinated Pork

    Prepare the Marinade

    In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and black pepper. Mix well until all ingredients are thoroughly blended.

    Marinate the Pork

    Cut the pork shoulder into strips or cubes and add it to the marinade. Ensure the pork is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Cook the Pork

    Preheat your grill or a skillet over medium-high heat. Remove the pork from the marinade and cook for about 10-15 minutes on each side, or until the pork is thoroughly cooked and has nice grill marks. Let it rest for a few minutes before slicing.

Tzatziki Sauce

    Prepare the Cucumber

    Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or paper towels.

    Mix the Tzatziki

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and black pepper. Mix well until smooth and creamy. Refrigerate for at least 30 minutes to allow the flavors to meld.

    Prepare the Pita and Garnishes

    Slice the tomato and red onion. Wash and dry the lettuce. Warm the pita bread in a toaster or on the grill for a few seconds until soft and pliable.

    Assemble the Gyros

    On a piece of warm pita bread, layer a serving of sliced pork, tzatziki sauce, sliced tomato, red onion, and lettuce. Roll or fold the pita around the filling and serve immediately.
