Marinated Pork

Prepare the Marinade
In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, ground cumin, salt, and black pepper. Mix well until all ingredients are thoroughly blended.

Marinate the Pork
Cut the pork shoulder into strips or cubes and add it to the marinade. Ensure the pork is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Prepare the Cucumber
Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or paper towels.

Prepare the Pita and Garnishes
Slice the tomato and red onion. Wash and dry the lettuce. Warm the pita bread in a toaster or on the grill for a few seconds until soft and pliable.

Assemble the Gyros
On a piece of warm pita bread, layer a serving of sliced pork, tzatziki sauce, sliced tomato, red onion, and lettuce. Roll or fold the pita around the filling and serve immediately.
