Falafel Preparation

    Prepare Chickpeas

    If using dried chickpeas, soak them in water overnight. If using canned chickpeas, drain and rinse them thoroughly.

    Make Falafel Mixture

    In a food processor, combine the chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse and holds together when pressed. If too dry, add a bit of water; if too wet, add flour as needed.

    Shape the mixture into small balls or patties, about 1-2 inches in diameter.
