Falafel Gyros Recipe

A delicious vegetarian delicacy made from a mixture of chic peas, exotic herbs and spices. Served on a freshly cooked pita bread with lettuce, tomatoes, red onions and topped with our famous tzatziki sauce.

Falafel Mixture

Method

Falafel Preparation

    Prepare Chickpeas

    If using dried chickpeas, soak them in water overnight. If using canned, rinse and drain well.

    Mix Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse and well-combined.

    Add Flour

    Transfer the mixture to a bowl and add the flour. Mix until it holds together. If too dry, add a little water.

    Chill Mixture

    Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes.

    Form Balls

    Take small portions of the mixture and roll them into balls or patties, about the size of a golf ball.

Cooking Falafel

    Heat Oil

    In a deep fryer or large skillet, heat the olive oil over medium-high heat until hot.

    Fry Falafel

    Carefully drop the falafel balls into the hot oil, frying in batches until golden brown (about 3-4 minutes per side).

    Drain Excess Oil

    Remove the falafel from the oil and place them on a paper towel-lined plate to drain excess oil.

Gyro Assembly

    Prepare Pita

    Warm the pita bread in a skillet or oven until soft and pliable.

    Assemble Gyros

    Place a few falafel balls on each pita, then top with shredded lettuce, diced tomatoes, sliced red onions, and a generous amount of tzatziki sauce.

    Serve

    Fold the pita over and serve immediately while warm. Enjoy!
