Pita Bread Preparation

Prepare the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until bubbly.

Mix Ingredients
Add the olive oil, salt, and flour gradually. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth.

Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

Shape the Pitas
Preheat the oven to 475°F (245°C). Punch down the dough and divide it into 6 equal pieces. Roll each piece into a ball and then flatten into a circle about 1/4 inch thick.

Bake the Pitas
Place the circles on a baking sheet and bake for 5-7 minutes until puffed and lightly golden. Remove and cover with a towel to keep warm.

Add Garlic
Stir in the minced garlic and cook for a minute until fragrant.

Add the ground lamb or beef, cumin, oregano, salt, and pepper. Cook until the meat is browned and fully cooked, about 8-10 minutes.

Rest the Meat
Remove from heat and let it rest for a few minutes before assembling the gyros.

Layer the Ingredients
On each pita, layer a generous portion of the cooked meat, followed by tomato, onion, cucumber, tzatziki sauce, and feta cheese.

Fold the pita in half and serve immediately, enjoying the colossal flavors!
