Method

Chicken Preparation

  1. 1

    Cook the Chicken

Preheat your grill or stovetop pan over medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper on both sides.

  2. 2

    Grill the Chicken

Place the chicken on the grill or pan and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes.

  3. 3

    Slice the Chicken

After resting, slice the chicken into thin strips or bite-sized pieces.

Salad Assembly

  1. 4

    Prepare the Salad Base

In a large salad bowl, add the romaine lettuce as the base. Tear or chop the lettuce into bite-sized pieces.

  2. 5

    Add Vegetables

Quarter the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Add these vegetables to the bowl with the lettuce.

  3. 6

    Add Avocado

Cut the avocado in half, remove the pit, and scoop the flesh into the salad. Cut into cubes and gently mix.

Dressing Preparation

  1. 7

    Mix the Dressing

In a small bowl, combine the Greek yogurt, lemon juice, Dijon mustard, honey, salt, and black pepper. Whisk until smooth and well combined.

Final Assembly

  1. 8

    Combine Chicken and Salad

Add the sliced chicken on top of the salad mixture. Drizzle the dressing over the top.

  2. 9

    Toss and Serve

Gently toss the salad to combine all ingredients. Serve immediately.
