Beef Gyro Filling

    Prepare the Beef Mixture

    In a large mixing bowl, combine the ground beef, minced garlic, oregano, paprika, cumin, salt, black pepper, and olive oil. Mix well until all ingredients are evenly incorporated.

    Shape the Beef

    Using your hands, form the beef mixture into oval patties or a loaf shape, pressing it firmly to ensure it holds together.

    Cook the Beef

    Preheat a grill or skillet over medium-high heat. Grill the patties for about 5-7 minutes on each side, or until fully cooked and slightly charred. Remove and let rest.

    Activate the Yeast

    In a small bowl, mix the warm water, yeast, and sugar. Let it sit for 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.

Assemble the Gyros

    Cut the cooked pita breads in half to create pockets.

    Stuff each pita pocket with the grilled beef patties, then top with shredded lettuce, diced tomatoes, sliced red onions, crumbled feta cheese, and drizzle with tzatziki sauce and hot sauce if desired.
