Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well until combined.

  2. 2

    Marinate the Chicken

Cut the chicken breast into 1-inch cubes and place them in the marinade. Stir to coat evenly. Cover and refrigerate for at least 30 minutes.

  3. 3

    Prepare the Lamb

In a separate bowl, mix the ground lamb with half of the prepared marinade. Form the lamb into small meatballs, about 1 inch in diameter.

  4. 4

    Chop the Vegetables

Chop the bell peppers and red onion into 1-inch pieces. Leave the cherry tomatoes whole.

Assembly and Cooking

  1. 5

Soak the Skewers (if using wooden skewers)

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. 6

    Assemble the Kabobs

Thread the marinated chicken, meatballs, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating between meat and vegetables.

  3. 7

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  4. 8

    Cook the Kabobs

Place the assembled skewers on the grill. Cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.

  5. 9

    Serve

Remove the kabobs from the grill and let them rest for a few minutes. Serve warm with your favorite dipping sauce or side.
