Prepare the Yucca
Peel the yucca root with a knife and cut it into thick batons, about 1/2 inch wide.

Boil the Yucca
In a large pot, bring water to a boil. Add the yucca batons and cook for about 15-20 minutes until tender. Drain and let cool slightly.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Yucca
Carefully add the boiled yucca batons to the hot oil in batches. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

Season the Fries
While still hot, sprinkle the yucca fries with salt, paprika, garlic powder, and black pepper. Toss to coat evenly.

Serve
Garnish with fresh cilantro if desired and serve hot with dipping sauce of your choice.
