Preheat the Oven

Preheat your oven to 160°C (320°F).

Prepare the Potatoes

Peel the potatoes and slice them thinly using a mandolin or a sharp knife.

Make the Cream Mixture

In a saucepan, combine the heavy cream, minced garlic, salt, and black pepper. Heat gently until just warm, then remove from heat.

Layer the Ingredients

In a buttered baking dish, arrange a layer of potato slices. Pour a bit of the cream mixture over the potatoes and sprinkle some grated Pecorino cheese on top. Repeat the layers until all ingredients are used, finishing with a layer of cream and cheese.

Bake

Dot the top with remaining butter and cover the dish with aluminum foil. Bake for about 45 minutes, then remove the foil and bake for an additional 15 minutes until the top is golden brown.

Cool and Serve

Allow the Potato Pave to cool for a few minutes before slicing and serving.
