Prepare the Yucca
Peel the yucca root and cut it into 1-inch pieces. Rinse under cold water.

Boil the Yucca
Place the yucca pieces in a large pot, cover with water, and bring to a boil. Cook for about 20 minutes or until tender. Drain and let cool.

Fry the Yucca
In a deep pot, heat vegetable oil over medium-high heat. Once hot, carefully add the boiled yucca pieces in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Make the Peanut Sauce
In a bowl, whisk together peanut butter, soy sauce, honey or maple syrup, lime juice, minced garlic, and water until smooth. Adjust the consistency with more water if necessary. Add chili flakes to taste.

Serve
Serve the fried yucca hot, drizzled or served with the peanut sauce on the side.
