Curing Process

    Prepare the Cure

    In a bowl, mix together the sea salt, brown sugar, black peppercorns, and lemon zest until well combined.

    Prepare the Salmon

    Place the salmon fillet skin-side down on a large piece of plastic wrap. If using vodka, drizzle it over the fillet.

    Apply the Cure

    Spread the salt and sugar mixture evenly over the salmon, covering it completely. Add the fresh dill on top.

    Wrap and Refrigerate

    Wrap the salmon tightly in the plastic wrap, and place it in a shallow dish to catch any liquid that may leak out. Refrigerate for 48 hours.

    Rinse and Slice

    After 48 hours, remove the salmon from the refrigerator, unwrap it, and rinse off the curing mixture under cold water. Pat dry with paper towels. Slice thinly at an angle.

    Serve

    Arrange the cured salmon on a platter and serve as desired, perhaps with crackers, cream cheese, or a salad.
