    Prep the Potatoes

    Peel the russet potatoes and shred them using a box grater or food processor. Place the shredded potatoes into a bowl of cold water to remove excess starch.

    Squeeze Out Water

    After soaking, drain the potatoes and place them on a clean kitchen towel. Squeeze out as much water as possible to ensure crispy hashbrowns.

    Prepare the Onion

    Finely chop the onion and set aside.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Cook the Hashbrowns

    Add the shredded potatoes and chopped onion to the skillet, spreading them out evenly. Season with salt and black pepper. Cook for about 5-7 minutes without stirring until the bottom is golden brown.

    Flip and Finish Cooking

    Carefully flip the hashbrowns using a spatula, and cook for another 5-7 minutes until the other side is golden brown and crispy.
