Peel the russet potatoes and shred them using a box grater or food processor. Place the shredded potatoes into a bowl of cold water to remove excess starch.

After soaking, drain the potatoes and place them on a clean kitchen towel. Squeeze out as much water as possible to ensure crispy hashbrowns.

Finely chop the onion and set aside.

In a large skillet, heat the vegetable oil over medium-high heat until shimmering.
