Roast the Portobello Mushrooms
Preheat the oven to 400°F (200°C). Clean the Portobello mushrooms and remove the stems. In a bowl, mix balsamic vinegar, olive oil, salt, and black pepper. Brush the mixture onto the mushrooms. Place them on a baking sheet and roast for 20 minutes, flipping halfway through.

Prepare the Vegetables
While the mushrooms are roasting, slice the red bell pepper and red onion. You can sauté them in a pan with a little olive oil for 5 minutes if you prefer them cooked.

Assemble the Sandwich
Once the mushrooms are roasted, remove them from the oven. On a slice of whole grain bread, spread a generous amount of mo-nut pesto. Layer fresh spinach, roasted Portobello mushrooms, sautéed red pepper, and red onion. Top with another slice of bread.
