Prepare the Rice and Orzo
In a large pot, combine the jasmine rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until rice is tender. In a separate pot, cook the orzo according to package instructions. Drain and set aside.

Make the Tomato Sauce
In a skillet over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent. Add the minced garlic, cumin, salt, and black pepper, and cook for another minute. Stir in the diced tomatoes and champagne vinegar. Simmer for about 10 minutes until the sauce thickens.

Combine Ingredients
Once the rice is cooked, fluff it with a fork and stir in the cooked orzo. Pour the tomato sauce over the rice and orzo mixture, and gently mix until everything is well combined.

Transfer the Koshary to a serving platter, sprinkle with fresh parsley, and serve warm. Enjoy your Koshary!
