Preparation
Wash and scrub the Russet potatoes thoroughly to remove any dirt.

Soaking
Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier.

Drying
After soaking, drain the potato slices and pat them dry with paper towels to remove as much moisture as possible.

Heating Oil
In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Frying
Carefully add a few potato slices to the hot oil, making sure not to overcrowd the pot. Fry them for about 3-4 minutes or until golden brown and crispy.

Draining
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.

Seasoning
While the chips are still hot, sprinkle them with sea salt, paprika, garlic powder, and black pepper to taste.
