1. Prepare the Lamb
In a large pot, heat the vegetable oil over medium-high heat. Add the diced lamb and sear until browned on all sides. Remove from the pot and set aside.
2. Sauté Aromatics
In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
3. Add Curry Powder
Stir in the Jamaican curry powder and cook for another minute to release its flavors.
4. Combine Ingredients
Return the browned lamb to the pot. Add the cubed yams, coconut milk, and chicken broth. Stir well to combine.
5. Simmer
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, or until the yams are tender and the lamb is cooked through. Season with salt and pepper to taste.
6. Serve
Serve the curried lamb and yam hot over a bed of jasmine rice.
