Prepare the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the rice is tender and the water is absorbed.

Brown the Lamb
In a large pot, heat a tablespoon of oil over medium heat. Cut the lamb shoulder into bite-sized pieces and season with salt and pepper. Add the lamb to the pot and brown on all sides. Remove and set aside.

Add Curry Powder
Stir in the Jamaican curry powder and cook for an additional minute until fragrant.

Combine Ingredients
Return the browned lamb to the pot, along with the diced yam, coconut milk, and chicken broth. Stir well to combine.

Simmer the Curry
Bring the mixture to a gentle simmer. Cover and cook for 45 minutes to 1 hour, or until the lamb is tender and the yam is soft. Stir occasionally and add more broth if needed.

Serve
Once cooked, taste and adjust seasoning with salt and pepper. Serve the curried lamb and yam over a bed of jasmine rice, garnished with sliced scallions.
