Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Roll and Fold
Once risen, punch down the dough and roll it into a rectangle. Fold in thirds like a letter. Repeat this process two more times, chilling the dough for 30 minutes between folds.

Shape the Croissants
Roll the dough into a larger rectangle and cut it into triangles. Place a small amount of chopped dark chocolate at the base of each triangle. Roll them up from the base to the tip.

Second Rise
Place the rolled croissants on a baking sheet lined with parchment paper. Cover and let them rise for another 30-45 minutes until puffy.

Preheat and Bake
Preheat the oven to 400°F (200°C). Brush the croissants with the egg wash. Bake for 15-20 minutes or until golden brown.

Cool and Serve
Remove from the oven and let them cool on a wire rack. Serve warm or at room temperature.
