Roast the Chicken
Preheat the oven to 200°C (400°F). Season the chicken thighs with salt and pepper, and place them on a baking tray. Roast for 25-30 minutes or until fully cooked. Once done, let them cool slightly, then shred or chop into bite-sized pieces.

Cook the Fettuccine
In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent. Then add the minced garlic and ginger, cooking for another minute until fragrant.

Combine Everything
Stir in the crushed tomatoes, garam masala, cumin powder, and paprika. Cook for about 5 minutes until the sauce thickens. Pour in the heavy cream, mix well, and let it simmer for another 5 minutes. Adjust seasoning with salt and pepper.

Mix in Chicken and Pasta
Add the roasted chicken pieces and cooked fettuccine to the sauce, tossing everything together until well coated.

Serve
Plate the Chicken Makhani Tagliatelle, sprinkle with shredded mozzarella cheese, and garnish with chopped cilantro. Serve hot.
