    Prepare the Dough

    In a large mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water, kneading until you form a smooth and elastic dough. Cover with a damp cloth and let it rest for 15-20 minutes.

    Make the Filling

    Peel and mash the boiled potatoes in a bowl. Add cumin seeds, chopped green chili, fresh coriander, and salt. Mix well to combine all the ingredients.

    Roll the Parathas

    Divide the dough into equal-sized balls. Take one ball, flatten it slightly, and roll it into a small circle. Place a spoonful of the potato filling in the center, fold the edges over the filling, and pinch them to seal. Roll it gently into a flat circle.

    Cook the Parathas

    Heat a skillet or tawa over medium heat. Place the rolled paratha on the skillet. Cook for about 2-3 minutes, then flip and apply ghee or oil on the cooked side. Cook the other side for another 2-3 minutes until golden brown. Repeat with remaining dough and filling.

    Serve

    Serve hot with yogurt, pickle, or butter on the side.
