    Cook the Filling

    In a large skillet, heat olive oil over medium heat. Add cumin seeds and cook until fragrant. Add chopped onions and sauté until translucent. Stir in diced acorn squash, peas, coriander powder, turmeric powder, salt, and black pepper. Cook until the acorn squash is tender, about 10-15 minutes. Set aside to cool.

    Prepare the Dough

    In a bowl, mix 2 cups of all-purpose flour with a pinch of salt. Gradually add water, kneading until a soft dough forms. Cover with a damp cloth and let it rest for 30 minutes.

    Assemble the Samosas

    Divide the dough into small balls. Roll each ball into a thin circle. Cut the circle in half to form two semi-circles. Take one semi-circle, fold it into a cone shape, sealing the edge with a little water. Fill the cone with the cooled filling and seal the open edge by pinching it together. Repeat with remaining dough and filling.

    Fry the Samosas

    Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until they are golden brown and crispy, about 4-5 minutes per batch. Drain on paper towels.

    Serve hot with tomato chutney on the side.
