Cooking the Pasta

    Boil the spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

    Reserve pasta water

    Before draining the spaghetti, reserve about 1 cup of the pasta water. Then, drain the spaghetti and set aside.

Preparing the Sauce

    Mix egg yolks and cream

    In a mixing bowl, whisk together the egg yolks, heavy cream, grated Parmesan cheese, and black pepper until well combined. Set aside.

Cooking the Pancetta

    Cook the pancetta

    In a large skillet over medium heat, add the diced pancetta. Cook until crispy and golden brown, about 5-7 minutes. Remove from heat.

Combining Ingredients

    Combine pasta and pancetta

    Add the drained spaghetti to the skillet with the cooked pancetta. Toss to combine well.

    Add the sauce

    Slowly pour the egg mixture over the spaghetti while continuously tossing to coat the pasta. The residual heat will cook the eggs gently and create a creamy sauce. Add reserved pasta water as needed to achieve desired consistency.

    Taste and adjust seasoning with salt and more black pepper if desired.

Serving

    Garnish and serve

    Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
