    Char the Pineapple

    Begin by charring the pineapple. Preheat a grill or grill pan over medium-high heat. Cut the pineapple into rings or wedges, then place them on the grill. Grill for about 3-4 minutes on each side or until you see nice grill marks and the pineapple is slightly caramelized. Remove from the grill and let cool.

    Prepare the Glass

    If you prefer a salted rim, run a lime wedge around the rim of your glass. Dip the rim into a plate of salt to coat it evenly. Set the glass aside.

    Blend the Charred Pineapple

    In a blender, combine the charred pineapple and blend until smooth. You may want to strain this mixture to remove any pulp if you prefer a smoother texture.

    Mix the Margarita

    In a cocktail shaker filled with ice, add the 400 Conejos Mezcal, Cuervo Tradicional Plata, Triple Sec, fresh lime juice, and the blended charred pineapple. Shake well for about 15-20 seconds until chilled.

    Serve the Drink

    Strain the margarita mixture into the prepared glass filled with ice, if desired. Garnish with a lime wedge on the rim. Enjoy your Mezcal Margarita!
