Chips & Salsa

Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Prepare the Avocados

Using a fork or a potato masher, mash the avocados to your desired level of creaminess (smooth or chunky).

Mash the Avocados

Pour the lime juice over the mashed avocados to add flavor and prevent browning.

Add Lime Juice

Add the finely chopped red onion, minced jalapeño, and fresh cilantro to the bowl and mix well.

Mix in Vegetables

Sprinkle in garlic powder, cumin, smoked paprika, salt, and black pepper. Stir until all ingredients are evenly combined.

Season the Mixture

Taste the guacamole and adjust seasoning with more salt, pepper, or lime juice as necessary.

Taste and Adjust

Transfer the guacamole to a serving bowl and serve immediately with tortilla chips or fresh vegetables.

Chop the jalapeño and cilantro. Drain the canned tomatoes if necessary.

Cut the Velveeta and cream cheese into cubes to help them melt evenly.

Cube the Cheese

In a medium saucepan over medium heat, combine the Velveeta cheese, cream cheese, and shredded cheddar cheese.

Combine Ingredients

Pour in the milk and stir continuously until the cheeses start to melt and blend together.

Add Liquid

Once the cheese is melted, mix in the diced tomatoes with green chilies, chopped jalapeño, garlic powder, onion powder, cumin, salt, and black pepper.

Mix in Vegetables and Spices

If the queso is too thick, add more milk a little at a time until you reach the desired consistency.

Adjust Consistency

Stir in hot sauce to taste for added heat.

Add Hot Sauce

Remove from heat and fold in fresh cilantro.

Finish with Cilantro

Transfer the queso to a serving bowl and enjoy with tortilla chips, veggies, or as a topping for tacos!

Rinse the shrimp under cold water and pat dry with paper towels. Remove the shells and devein if necessary.

Reduce the heat to low and let the mixture simmer for 5-7 minutes, allowing the flavors to meld together.
