    Prepare the Chicken Fried Steak

    Tenderize the cube steak by pounding it gently. Dredge each piece in flour, then dip in buttermilk, and finally coat with flour again.

    Fry the Steak

    Heat vegetable oil in a skillet over medium-high heat. Fry each piece of steak until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Make the Gravy

    In the same skillet, add the country sausage and cook until browned. Add flour to the drippings and stir to make a roux. Gradually whisk in milk, cooking until thickened. Season with salt and pepper.

    Cook the Potatoes

    Dice the country potatoes and boil until tender. Drain and sauté in a skillet until golden brown. Season with salt and pepper to taste.

    Prepare the Pancakes

    In a bowl, mix pancake mix according to package directions. Cook on a griddle until bubbles form, then flip and cook until golden.

    In a separate skillet, fry or scramble the eggs to your preference.
