Preparation and Baking
- 1
Prepare the Filling
In a large bowl, combine sliced peaches, granulated sugar, ground cinnamon, flour, lemon juice, and a pinch of salt. Gently toss until peaches are well coated. Set aside.
- 2
Make the Lattice Crust
Prepare a double pie crust (store-bought or homemade). Roll out one half of the dough and place it in a 9-inch pie pan. Pour the peach filling into the crust.
- 3
Assemble the Lattice
Roll out the second half of the dough and cut it into 1-inch strips. Lay half the strips over the filling in one direction, then fold back every other strip and lay another strip in the opposite direction. Unfold the folded strips over the new strip. Repeat until the lattice is complete.
- 4
Bake the Pie
Preheat the oven to 425°F (220°C). Bake the pie for 45-50 minutes or until the crust is golden brown and the filling is bubbling. Let cool before serving.
