    Prepare the Gravy

    In a skillet, cook the country sausage over medium heat until browned. Remove the sausage and set aside, leaving the drippings in the skillet. Add 2 tablespoons of flour to the drippings and stir to create a roux. Gradually add milk while stirring until thickened. Season with salt and pepper to taste, then stir the cooked sausage back in. Keep warm.

    Cook the Vegetables

    In another skillet, melt 1 tablespoon of butter over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes. Remove from heat and set aside.

    Make the Omelette

    In a bowl, whisk together eggs, milk, salt, and pepper. In the same skillet used for the onions, melt the remaining tablespoon of butter over medium heat. Pour the egg mixture into the skillet, swirling to coat the bottom evenly. Cook until the edges begin to set.

    Add Fillings

    Once the edges are set, add the sautéed onions, diced ham, cooked sausage, crumbled bacon, and shredded cheese to one half of the omelette. Carefully fold the other half over the fillings and cook for an additional 2-3 minutes until the cheese is melted and the eggs are fully cooked.

    Serve

    Slide the omelette onto a plate and spoon the sausage gravy over the top. Serve hot.
