Preheat your oven to 220°C (425°F). Spread the frozen French fries on a baking sheet in a single layer and bake according to package instructions until they are golden and crispy, about 20-25 minutes.

Prepare the Topping
While the fries are baking, in a saucepan over medium heat, combine the diced green chiles and shredded cheddar cheese. Stir until the cheese is melted and creamy.

Assemble the Chile Cheese Fries
Once the fries are cooked, remove them from the oven and layer the melted cheese and green chiles generously over the fries.

Top the cheesy fries with cooked carnitas, pico de gallo, and jalapeños if using.

Drizzle sour cream over the loaded fries and garnish with fresh cilantro.
