Prepare the Chicken-Fried Steak

Coat the Steak
In a shallow dish, combine flour, salt, and pepper. In another bowl, whisk together buttermilk and eggs. Dip each steak in buttermilk mixture, then coat with flour mixture.

Fry the Steak
Heat vegetable oil in a large skillet over medium-high heat. Fry each coated steak for about 5-7 minutes on each side until golden brown. Drain on paper towels.
Make the Green Chile Sausage Gravy

Cook the Sausage
In the same skillet, cook the green chile sausage over medium heat until browned. Sprinkle flour over the sausage and stir to combine.

Add Milk and Season
Gradually whisk in milk until the mixture thickens. Season with salt, black pepper, and cayenne pepper. Keep warm.
Prepare the Mashed Potatoes

Boil the Potatoes
Peel and cut the russet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

In a small saucepan, melt butter over medium heat. Add mixed vegetables and season with salt and pepper. Cook until heated through, about 5 minutes.
