Prepare the Apples
Peel, core, and slice the Northern Spy and Granny Smith apples. In a large mixing bowl, combine the apples with lemon juice, sugar, cinnamon, nutmeg, and flour. Toss until the apples are well coated.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Pie Crust
Roll out your pie crust and place it in a 9-inch pie pan. Fill it with the apple mixture, spreading it evenly.

Add the Top Crust
Roll out a second pie crust and place it over the filling. Trim the excess crust, seal the edges, and cut slits in the top to allow steam to escape.

Bake the Pie
Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until the apples are tender and the crust is golden brown.

Cool and Serve
Allow the pie to cool for at least 2 hours before serving to let the filling set. Serve warm or at room temperature with vanilla ice cream or whipped cream.
