Prepare Catfish

1. Prepare the Breading

In a bowl, mix cornmeal, flour, cajun seasoning, salt, and black pepper.

2. Prepare Egg Mixture

In another bowl, whisk together the egg and milk.

3. Bread the Catfish

Dip each catfish fillet into the egg mixture, then into the cornmeal mixture, ensuring all sides are coated.

Fry Catfish

4. Heat Oil

In a deep skillet, heat oil over medium-high heat until it reaches 350°F (175°C).

5. Fry the Catfish

Carefully place the breaded catfish fillets in the hot oil and fry for about 4-5 minutes per side, or until golden brown. Remove and drain on paper towels.

Prepare Dirty Rice

6. Cook the Rice

In a pot, bring water to a boil. Add the long-grain rice, cover, and reduce heat to low. Cook for about 18 minutes or until rice is tender.

7. Cook the Meat and Vegetables

In a skillet, cook the ground pork over medium heat until browned. Add onion, bell pepper, celery, and garlic, cooking until softened.

8. Combine with Rice

Stir in cajun seasoning, salt, and black pepper. Mix in the cooked rice and combine thoroughly. Cook for an additional 5 minutes.

Prepare Remoulade

9. Make the Remoulade

In a bowl, mix together mayonnaise, Dijon mustard, capers, Worcestershire sauce, hot sauce, lemon juice, and parsley until well combined.

Plate the fried catfish alongside dirty rice and serve with remoulade on the side.
