    Prepare the Onions

    Slice the onions thinly and set aside.

    Sauté the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and sauté until they are caramelized, about 25-30 minutes, stirring occasionally.

    Add Liquids

    Once the onions are caramelized, add the dry white wine, beef broth, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.

    Prepare the Baguette

    While the soup is simmering, slice the baguette into thick slices and toast them until golden brown.

    Assemble in Crocks

    Preheat your oven to 350°F (175°C). Pour the soup into crocks, place a slice or two of toasted baguette on top of the soup, and sprinkle with shredded Gruyère cheese.

    Bake the Soup

    Place the crocks on a baking sheet and bake in the oven for about 15-20 minutes until the cheese is melted and bubbly.
