    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and sear them until browned on all sides. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent. Then, add the carrots and potatoes, stirring for about 5 minutes.

    Combine Ingredients

    Return the seared beef to the pot. Stir in the tomato paste, Guinness beer, beef broth, bay leaves, and thyme. Season with salt and black pepper.

    Simmer

    Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 2 hours, or until the beef is tender.

    Serve

    Remove bay leaves before serving. Ladle the stew into bowls and enjoy hot.
