    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch wide.

    Soak the Fries

    Place the cut potato strips into a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

    Fry the Potatoes

    Carefully add a handful of dried potato strips to the hot oil. Fry in batches for about 4-5 minutes or until golden brown and crispy. Do not overcrowd the pot.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and let them drain on paper towels. Immediately season with salt and pepper while hot.
