    Marinate the Ribeye

    Rub the ribeye steak with Cajun seasoning and let it marinate for at least 30 minutes.

    Prepare the Papas Bravas

    In a skillet, heat olive oil over medium heat. Add diced potatoes and season with salt and pepper. Cook until golden and crispy, about 15-20 minutes, stirring occasionally.

    Cook the Ribeye

    In a separate skillet, melt Texas butter over medium-high heat. Add the marinated ribeye steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

    Char the Jalapeno

    In the same skillet, add the whole jalapeno and char on all sides until blistered, about 5 minutes. Remove and set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Add a splash of vinegar. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon.

    Assemble the Dish

    On a plate, arrange the crispy Papas Bravas, slice the ribeye, and place it next to the potatoes. Top with poached eggs and charred jalapeno.
