    Prepare the Lobster Tails

    Begin by cutting the lobster tails down the center to expose the meat. Gently lift the lobster meat out and rest it on top of the shell.

    Make the Buttermilk Batter

    In a bowl, whisk together the buttermilk, salt, black pepper, and cayenne pepper.

    Prepare the Dry Coating

    In a separate bowl, combine the all-purpose flour and cornstarch.

    Batter the Lobster

    Dip each lobster tail first into the buttermilk mixture, then dredge it in the flour-cornstarch mixture to coat evenly.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Lobster Tails

    Carefully place the coated lobster tails in the hot oil and fry for about 3-4 minutes until golden brown and cooked through.

    In a small saucepan, melt the unsalted butter over low heat. Stir in honey until well combined.

    Cut the lime, lemon, and orange in half and char them on a grill or in a hot pan until grill marks appear.
