Ingredients for Lush Lemon Meringue Tart

Method

Directions for Lush Lemon Meringue Tart

  1. 1

    Prepare the crust

In a large bowl, mix together the flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs. Press the mixture into the bottom and up the sides of a tart pan. Prick the bottom with a fork and refrigerate for 30 minutes. Preheat the oven to 350°F (175°C) and bake for 15 minutes or until lightly golden. Let cool.

  2. 2

    Make the lemon filling

In a medium saucepan, whisk together the egg yolks, granulated sugar, lemon juice, lemon zest, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble. Remove from heat and stir in butter until melted. Pour the lemon filling into the cooled tart shell.

  3. 3

    Prepare the meringue

In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the granulated sugar and continue to beat until stiff peaks form. Spread the meringue over the lemon filling, sealing the edges.

  4. 4

    Bake the tart

Return the tart to the oven and bake at 350°F (175°C) for 10-12 minutes or until the meringue is golden brown. Let cool to room temperature before slicing.
