Method
Preparation
- 1
Marinate the Wings
In a large bowl, combine chicken wings, pineapple juice, jerk seasoning, lemon pepper, salt, and black pepper. Mix well to ensure the wings are evenly coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
- 2
Braise the Wings
Preheat your oven to 300°F (150°C). Place the marinated wings on a baking sheet lined with parchment paper. Bake for 30-40 minutes or until cooked through and tender.
- 3
Flash Fry the Wings
Heat the vegetable oil in a deep skillet or fryer to 375°F (190°C). Carefully add the braised wings to the hot oil in batches, frying for about 3-4 minutes or until they are golden and crispy. Remove wings and drain on paper towels.
- 4
Prepare the Garnish
In a small bowl, mix the sliced jalapenos and chopped cilantro. Once the wings are fried, sprinkle the jalapeno-cilantro mixture over the wings for added flavor.
- 5
Serve
Plate the wings and serve immediately, garnished with extra jalapenos and cilantro if desired.
