Sopresatta Preparation
Prepare the Meat
Cut the pork shoulder and fatback into small cubes, approximately 1-inch pieces.
Mix Ingredients
In a large bowl, combine the pork cubes with salt, black pepper, red pepper flakes, minced garlic, and white wine. Mix thoroughly to ensure all pieces are coated.
Grind the Mixture
Pass the meat mixture through a meat grinder fitted with a coarse plate. Grind it twice for a finer texture if desired.
Stuff the Casings
Rinse the hog casings in cold water and soak them for at least 30 minutes. Use a sausage stuffer to fill the casings with the meat mixture, being careful not to overstuff.
Tie the Sausages
Twist the sausages into 12-inch links and tie off the ends with butcher's twine.
Curing
Hang the sausages in a cool, humid place (ideally between 50-60°F with 70-80% humidity) for 2-3 weeks to cure.
Store
Once cured, store the sopresatta in the refrigerator or vacuum-seal for longer preservation.
