Cooking Directions
Combine Ingredients
In a mixing bowl, combine the sautéed mixture with the pork fat and blood. Make sure the rice is evenly distributed throughout the mixture.
Stuff the Casings
Carefully rinse the sausage casings and soak them in water for about 30 minutes. Stuff the casings with the blood mixture, taking care not to overfill. Tie the ends securely.
Cook the Morcilla
Bring a large pot of water to a gentle simmer. Carefully add the stuffed morcilla and cook for about 30-40 minutes. Once cooked, remove and let cool.
Serve
Slice the morcilla and serve it warm or at room temperature. It can be enjoyed on its own or with bread and a side of pickles.
