1. Prepare the beef
Slice the prime beef into thin cutlets (about 1/2 inch thick). Tenderize the beef using a meat mallet if necessary.
2. Bread the cutlets
Set up a breading station with three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs. Dip each cutlet first in flour, then in the egg, and finally coat it with breadcrumbs.
3. Fry the milanesa
Heat the olive oil in a large skillet over medium heat. Fry the breaded cutlets for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
