    Make the Dough

    In a large bowl, mix the flour and salt. Create a well in the center and add the eggs. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, combine ricotta cheese, diced ham, salt, and pepper. Mix well.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece into thin sheets, about 1/8 inch thick.

    Fill the Sorrentinos

    Place a teaspoon of filling on one sheet, leaving space between each. Moisten the edges with water and cover with another sheet of dough. Press to seal and cut into round shapes.

    Cook the Sorrentinos

    Bring a large pot of salted water to a boil. Cook the sorrentinos in batches for 3-4 minutes until they float. Remove with a slotted spoon.

    Make the Salsa Rosa

    In a pan, heat olive oil and sauté minced garlic until fragrant. Add crushed tomatoes, salt, and pepper. Simmer for 10 minutes. Stir in heavy cream and basil, cooking for an additional 5 minutes.

    Serve the cooked sorrentinos topped with the salsa rosa sauce.
