Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a bowl, mix the roasted and mashed butternut squash, ricotta cheese, parmesan cheese, nutmeg, salt, and black pepper until well combined.

Roll Out the Dough
Divide the dough into four pieces. Roll out each piece on a floured surface to about 1/16 inch thick. Cut into squares or circles.

Fill the Ravioli
Place a small spoonful of filling in the center of half of the dough pieces. Moisten the edges with water, then press another piece of dough on top to seal. Crimp the edges with a fork.

Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon.

Make the Creamy Sage Sauce
In a skillet, melt the butter over medium heat. Add the sage leaves and cook until fragrant. Stir in the heavy cream, salt, and black pepper. Simmer for 3-4 minutes, until slightly thickened.

Toss the cooked ravioli in the creamy sage sauce and serve immediately.
