Cook the Beef Milanesa
Fry the beef milanesa pieces in a pan until golden brown and cooked through. Drain on paper towels.

Toast the Campo Bread
Toast the slices of campo bread until golden and crispy.

Poach the Eggs
Bring a pot of water to a gentle simmer. Add vinegar and create a vortex. Crack each egg into a small bowl and gently slide it into the water, poaching for about 3-4 minutes. Remove with a slotted spoon.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place over a pot of simmering water and whisk until thick. Gradually add melted butter, whisking constantly until emulsified. Season with salt and cayenne pepper.

Assemble the Bunbury Benedicts
On each slice of toasted campo bread, layer with a piece of beef milanesa, a spoonful of tomato confit, and a poached egg. Drizzle generously with hollandaise sauce and serve with French fries on the side.
