Braised Short Rib “al Malbec” Recipe

    Prepare the Short Ribs

    Season the short ribs with salt and black pepper. In a large pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Liquids

    Pour in the Malbec wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let cook for about 5 minutes.

    Braise the Short Ribs

    Return the short ribs to the pot. Add beef broth, thyme, and bay leaves. Bring to a boil, then reduce heat to low, cover, and let simmer for 2.5 to 3 hours or until the ribs are tender.

    Prepare the Mashed Potatoes

    While the ribs are braising, peel and quarter 2 lbs of potatoes, then boil until tender. Mash with butter, cream, salt, and pepper to taste.

    Serve

    Remove the ribs from the pot and let rest for a few minutes. Serve the short ribs over a bed of mashed potatoes and garnish with the braising liquid and fresh thyme.
