Preparation
Preheat your oven to 375°F (190°C).

Marinate the Lamb
In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, black pepper, and lemon juice. Rub this mixture all over the leg of lamb, ensuring it's well-coated. Let it marinate for at least 30 minutes at room temperature or overnight in the refrigerator.

Sear the Lamb
In a large oven-safe skillet or Dutch oven, heat a bit more olive oil over medium-high heat. Once hot, sear the marinated leg of lamb on all sides until browned (about 5 minutes per side).

Roasting
Add the vegetable broth to the skillet with the lamb. Cover with a lid or aluminum foil and transfer to the preheated oven. Roast for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

Remove the lamb from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute.
