Prepare the sausage mixture
In a large mixing bowl, combine ground pork, chopped cilantro, minced ginger, minced garlic, minced red chili peppers, fish sauce, sugar, and black pepper. Mix well until all ingredients are evenly combined.

Stuff the sausage (optional)
If using pork casings, rinse them in cold water and soak them in warm water for about 30 minutes. Stuff the sausage mixture into the casings, twisting every few inches to create links.

Form patties (if not stuffing)
If not using casings, form the mixture into patties, about 1/2 inch thick.

Cook the sausage
Heat a skillet over medium heat. Cook the sausage links or patties for about 8-10 minutes per side, or until fully cooked through and browned on the outside.

Serve
Remove the sausage from the skillet and let it rest for a few minutes before serving. Enjoy with sticky rice or your favorite dipping sauce.
