    Soak the black beans in water overnight. Drain and rinse before cooking.

    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until translucent. Add pork shoulder, smoked sausage, chorizo, and beef. Brown the meats on all sides.

    Add the soaked black beans, bay leaves, smoked paprika, cumin, black pepper, and enough water to cover the ingredients. Bring to a boil.

    Reduce heat to low and simmer for about 2 to 3 hours until the beans are tender and the meats are cooked through. Stir occasionally and add more water if necessary.

    Taste and adjust seasoning with salt as needed.
