Prepare the Cream Mixture
In a saucepan, heat the heavy cream and vanilla bean (split and scraped) over medium heat until it begins to simmer. If using vanilla extract, add it after removing from heat.

Whisk Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is smooth and pale.

Combine Mixtures
Slowly pour the hot cream mixture into the egg yolk mixture while whisking continuously to prevent curdling. Strain the mixture through a fine mesh sieve into a clean bowl.

Bake
Bake in the preheated oven for 30-40 minutes or until the custards are set but still slightly jiggly in the center. Remove from oven and let cool to room temperature.

Chill
Refrigerate the cooled custards for at least 2 hours or up to overnight.

Caramelize the Sugar
Before serving, sprinkle a thin layer of brown sugar on top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crispy, golden crust. Let it sit for a minute to harden before serving.
